НАСІННЄВА ПРОДУКТИВНІСТЬ І БІОХІМІЧНИЙ СКЛАД ЗЕРНА ОЗИМОЇ СПЕЛЬТИ ТА ПОЛБИ ЗА УМОВ ПІВДНЯ СТЕПОВОЇ ЗОНИ УКРАЇНИ

Визначено морфометричні параметри, насіннєву продуктивність колоса, біохімічний склад зерна (за вмістом крохмалю, клітковини, золи, жиру, білка) колекційних зразків плівчастих пшениць Triticum spelta L. (спельти) i T. dicoccum (Schrank) Schuebl. (полби), вирощених у польових умовах на півдні степової зони України. Наведено характеристику фракційного складу білка зерна обох видів пшениць. За кількістю зернин у колосі та масою 1000 зернин виявлено відмінності як між видами пшениць, так і між дослідними зразками одного ви­ду. Найбільші маса 1000 зерен та зернова продуктивність колоса головного пагона були властиві для зразка спельти UA0300259. Найбільша маса зерна з колоса головного пагона серед зразків двозернянки була характерною для UA0300087, що пов'язано з найбільшими показниками у цього зразка як кількості зерен у колосі, так і маси 1000 зернин. Вміст крохмалю в суцільнозмеленому борошні зерна полби становив 50—61 %, в зерні спельти — 49—55 % залежно від зразка. Вміст ліпідів і клітковини в суцільнозмеленому борошні зерна спельти та полби варіював серед дослідних зразків, а за вмістом золи достовірних відмінностей між зразками не виявлено. Вміст білка у суцільнозмеленому борошні зерна спельти становив 16,2—19,9 %, полби — 14,0—22,6 % залежно від зразка. Співвідношення вмісту глютенінів і гліадинів для спельти дорівнювало 1,1, для полби — 0,7—1,4 залежно від зразка. Згідно з викладеними даними, за умов півдня степової зони України зразок спельти UA0300259 і зразок полби UA0300087 поєднували найбільшу продуктивність колоса, високу масу 1000 зернин та високий вміст білка в зерні.
